Eric Bordelet trained as a sommelier under the tutelage of some of the greatest names in the French wine and restaurant world. In 1992 he returned to the family farm – located on the iron-rich slate and granite soils of their patch of the Normandie/Vallée de la Loire border – and its 32 hectares of organic apples (30 varieties) and pears (20). Growing and production are undertaken with the attention of a top-flight winemaker, and the result is a uniquely nuanced, mineral, fruity style made not just to quench the thirst, but to pair with food, as well.
The Bordelet Sidre Brut is softly sparkling with a firm flintiness underlying dry russet flavours. Sweeter apple flavours shine through, adding complexity, but the overall style is understated sophistication. A cider for the aficionado.
Pair with mature, hard cheeses and charcuterie.
