Provolone has a long and storied history. It has its roots in the northern Italian plains of the Valpadana in the eighteenth century.
Cistercian monks used goat and sheep rennet to make a ‘pasta filata’ cheese, such as had until then been found in the south of the country.
The cheese was awarded its Protected Designation certification in 1996.
